02 - 1 tsp kosher salt
03 - 1/2 tsp black pepper

→ Garlic Butter Sauce

04 - 3 tbsp unsalted butter
05 - 4 cloves garlic, finely minced
06 - 1 tbsp fresh parsley, chopped
07 - 1/2 tsp crushed red pepper flakes (optional)

→ For Cooking

08 - 1 tbsp olive oil

# How To:

01 - Pat steak cubes dry with paper towels and season evenly with kosher salt and black pepper.
02 - Heat a large skillet over high heat, add olive oil, and swirl to coat the surface.
03 - Arrange steak cubes in a single layer without overcrowding and sear for 2 minutes without moving. Turn to brown all sides for an additional 2 to 3 minutes until medium-rare. Remove and cover loosely.
04 - Reduce heat to medium-low, add butter to the skillet, melt it, then add minced garlic and sauté for 30 seconds until fragrant without browning.
05 - Return steak bites to the skillet, toss to coat in garlic butter, then sprinkle with chopped parsley and optional crushed red pepper flakes.
06 - Serve immediately with pan sauce spooned over the steak bites.

# Expert Tips:

01 -
  • Twenty minutes to something that tastes like it came from a steakhouse
  • That garlicky butter sauce makes everything better, even the simple sides
02 -
  • Dont crowd the pan or the steak will steam and you will lose the crust, which is the whole point
  • Watch the garlic carefully once it hits the butter because burnt garlic tastes bitter and ruins the vibe
03 -
  • Take the steak out of the fridge 20 minutes before cooking so it sears evenly instead of going from cold center to overcooked outside
  • A splash of lemon juice or Worcestershire in the butter sauce takes it to the next level
