  • Cake: 2 ½ cups (310 g) all-purpose flour, 2 ½ tsp baking powder, ½ tsp salt, 1 cup (225 g) unsalted butter softened, 2 cups (400 g) granulated sugar, 4 large eggs, 1 cup (240 ml) whole milk, 2 tsp vanilla extract
  • Buttercream Frosting: 1 cup (225 g) unsalted butter softened, 4 cups (480 g) powdered sugar, 2–3 tbsp (30–45 ml) milk, 1 tsp vanilla extract, pinch of salt
  • Decoration: 2 lbs (900 g) white fondant, food coloring gel (blue, red, green, or team colors of choice), edible black food marker or black fondant, cornstarch (for rolling fondant)

Instructions

1. Preheat oven
Preheat oven to 350°F (175°C). Grease and line a 9x13-inch (23x33 cm) cake pan with parchment paper.
2. Mix dry ingredients
In a bowl, whisk together flour, baking powder, and salt.
3. Cream butter and sugar
In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each.
4. Combine ingredients
Mix in vanilla. Alternately add flour mixture and milk, beginning and ending with flour, mixing just until combined.
5. Bake
Pour batter into prepared pan. Smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely in the pan.
6. Prepare buttercream
Beat butter until smooth. Gradually add powdered sugar, vanilla, salt, and milk, beating until fluffy and spreadable.
7. Carve cake
Once cake is cool, carefully remove from pan. Using a serrated knife, carve the cake into a jersey shape (rectangle with slight curves at the shoulders and indentations at the sides for armholes).
8. Crumb coat
Cover the entire cake with a thin layer of buttercream (crumb coat). Chill for 30 minutes.
9. Tint and roll fondant
Tint fondant with desired team colors using food coloring gel. Roll out fondant on a cornstarch-dusted surface to about ⅛ inch (3 mm) thickness.
10. Cover cake
Drape fondant over chilled cake, smoothing over the surface and trimming excess.
11. Add jersey details
Use additional colored fondant or edible markers to add jersey details: collar, numbers, name, stripes, and graduation year.
12. Serve
Transfer cake to a serving board and display proudly.

Zusatztipps für die Zubereitung

Make sure the cake is completely cool before carving and frosting to prevent crumbs and melting. Use food-safe gloves when tinting and working with fondant colors to keep shades bright and prevent staining hands. Chilling the crumb coat facilitates easier fondant application without tearing or sliding.

Can I customize the jersey for different sports?

Absolutely! Change the fondant colors, add sport-specific details, and personalize with names or numbers to match any sport or team for the honored graduate.
