  • 250 g (9 oz) ground beef (80/20 preferred)
  • 2 large ripe avocados, halved and pitted
  • 1 small tomato, diced
  • 1/4 small red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tbsp fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 lime, juiced
  • 80 g (1/3 cup) sour cream
  • 60 g (1/2 cup) shredded cheddar or Mexican cheese blend
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tbsp olive oil

Instructions

Make the fresh salsa
Prepare the salsa by combining tomato, red onion, jalapeño, cilantro, half the lime juice, and a pinch of salt in a small bowl. Set aside.
Cook the taco meat
Heat olive oil in a skillet over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5 minutes.
Add flavor to the meat
Stir in garlic, chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 2 more minutes until fragrant. Remove from heat.
Prepare the avocados
Halve the avocados and remove pits. Carefully scoop out a small amount of flesh from each half to create a larger cavity, reserving the scooped avocado.
Enhance the salsa
Dice the reserved avocado flesh and gently fold it into the salsa.
Prevent browning
Squeeze the remaining lime juice over the avocado halves to prevent browning.
Fill and top the avocados
Divide the taco meat evenly among the avocado halves. Top with cheese while the meat is warm to allow melting.
Add the finishing touches
Spoon salsa over each stuffed avocado. Add a dollop of sour cream on top. Serve immediately.
