# How To:
01 - Preheat oven to 350°F (180°C). Grease and line an 8-inch round cake pan with parchment paper.
02 - Using an electric mixer on high speed, beat the eggs for 5 to 7 minutes until thick, pale, and tripled in volume.
03 - Gradually add granulated sugar while continuing to beat until the mixture becomes glossy and ribbons form when lifted.
04 - Carefully fold the sifted flour into the egg mixture in three additions using a spatula, ensuring not to deflate the batter. Fold in vanilla extract with the last addition if using.
05 - Pour the batter into the prepared pan and gently smooth the surface.
06 - Bake for 22 to 25 minutes until the top is golden and a toothpick inserted into the center comes out clean.
07 - Allow the cake to cool in the pan for 5 minutes. Run a knife around the edges, then invert onto a wire rack and cool completely.
