# Expert Tips:

01 -
  • This soup has this magical quality of tasting even better the next day when all the flavors have had time to get friendly with each other.
  • You can toss in whatever vegetables are looking sad in your crisper drawer, making it the perfect end of week reset meal.
02 -
  • Never rush the initial vegetable sauteing, those first five minutes are when crucial flavor compounds are being released into the oil.
  • Taste before final seasoning, as vegetable stocks vary wildly in salt content and can make or break your soup.
03 -
  • Cut all vegetables approximately the same size for even cooking and a more satisfying spoonful.
  • For a heartier version, stir in a can of drained white beans during the last 5 minutes of cooking.
